Yeast Maturation Tank

Yeast maturation tank collects yeast coming from fermentation process. Those yeasts are continuously recirculated and special physical/chemical conditions allow further mannoproteins extraction, which otherwise would be lost if those yeast are not used anymore after fermentation.
Process is fully automated and remotely supervised, according to industry 4.0 technologies. Maturation tank is equipped with sensors and valves, which measure and regulate parameters such as oxygen, pH, sulfur dioxide mass and global temperature.
Thermal conditioning made externally through cooling jackets is actively combined with process control.
Maturation tank allows each winery to produce mannoproteins that improve quality of the wine, starting from materials that otherwise would be eliminated along with other wastes.
