Grape crystals. Solid rectified concentrated must in oenological applications

It has been more than 10 years since crystalline grape sugar or Solid Rectified Concentrated Must, developed and produced entirely in Italy, was recognised and approved in the EU as a wine product.

In this meeting, the motivations and the journey in terms of technology, legislation and application that led to the development of this innovative ingredient have been described, starting from the analysis and characterisation of the family of sugars, both grape sugars and sugars of different origin, up to the Solid Rectified Concentrated Grape Must.

"Grape crystals" is also a book, stemming from the collaboration of Assoenologi with Naturalia Ingredients, which explores the internationally patented production process, the chemical-physical characteristics and the results of the application studies in the different oenological practices. A tool for in-depth analysis and professional updating on the use of sugars in winery applications and on the potential of this extraordinary all-Italian invention.
