Impact of barley on beer quality
The malthouse at the University of Udine
The malthouse, with a capacity of 5 q, acquired in 2016 by the University of Udine, was the first operational equipment for both experimentation and production in an Italian university. In Italy, it is hard for craft beer producers to source malt of Italian origin. Consequently, they are forced to buy malt of foreign origin or in some cases, if they are barley producers as well as beer producers, to send it to foreign malthouses with an inevitable increase in costs deriving from transport. In addition, the negative aspect of road transport in terms of the environmental impact should not be underestimated. Therefore, although it is small in size, the University's malthouse can promote the use of locally produced barley and the production of beers authentically linked to the territory by changing the perception of beer once seen only as an industrial product. In fact, we are witnessing the development of agricultural breweries. These are companies focused not only on the artisanal dimension but also on the self-production of all raw materials, creating an integrated short-chain system with great potential.
