An overview of migration of 2,4,6-trichloroanisole (TCA) migration towards wine will be discussed.
The aim of this work is the development of a process to eliminate 2,4,6-trichloroanisole of whole cork without impacting the intrinsic moisture of cork stoppers, guaranteeing the physical-mechanical proprieties. The principle of this technology is the use of a solution with great affinity to TCA, combined with a selective irradiation and hot air.
Validation results obtained with an industrial prototype will be discussed with different operation conditions and production flows.
Facing the results obtained, the project up-scale will be presented as a conclusion.
