Round table by Millevigne
The disposal of waste from the wine chain generates an environmental and economic cost that is borne by producers and the community every year. A cost that could be avoided and even transformed into value, if waste and by-products could return to the production cycle or even better be reused according to the principles of the circular economy. To become truly efficient and sustainable, however, the use of pomace, rasps, lees and seeds requires a completely new model and the implementation of projects, services and networks that favour the meeting of all players in the world of production, logistics, transformation and innovation. The round table will address the potential, costs and benefits that transition to the circular economy may bring to wineries and will seek to identify the critical points and changes necessary for this change to take place.
