We are pleased to announce EnoForum Web 2026, the online scientific event dedicated to the latest developments in the oenological and wine sector. The event will take place via live streaming on 20, 21 and 22 October 2026, from 4:00 pm to 7:30 pm.
Three days of high-level educational content will bring together leading speakers from some of the world’s most prestigious universities, as well as R&D managers from major technology suppliers.
This year’s programme will also feature a dedicated session on the technologies recognised by SIMEI. During the event, the winning companies of the 2024 SIMEI Innovation Challenge “Lucio Mastroberardino” will present their projects and award-winning innovations, offering participants a practical insight into some of the most advanced solutions currently available to the sector.

Tuesday, 20 October – Oxygen management, No and Low Alcohol wines, and wine quality
The opening day will begin with a session on best practices for oxygen management in the winery, featuring Ignacio Nevares and María del Álamo (Grupo UVaMOX, University of Valladolid, Spain) and Luca Opreni (SIAD, Italy).
The programme will continue with a look at No and Low Alcohol wines and the role of research and technology in product quality, with Milena Lambri (Università Cattolica del Sacro Cuore, Milan) and Rebecca Bodon (Omnia Technologies); strategies for enhancing the fruity aromatic profile of red wines, with Maurizio Ugliano (University of Verona) and Daniele Pizzinato (Oenofrance); and the concept of wine balance based on experimental data, with Federico Casassa (Cal Poly University, USA) and Miguel Martínez (Grupo Agrovin, Spain).
Wednesday, 21 October – Sulphites, grape pressing and sparkling wine production
The second day will explore antioxidant strategies for reducing sulphites, with Claudia Nioi (University of Bordeaux, France) and Simone Bellassai (CDR WineLab, Italy).
Further sessions will examine the potential of chitosan in winemaking, from clarification to microbiological protection, with Marguerite Dols Lafargue (University of Bordeaux, France) and Samuele Lercari (Dal Cin, Italy); scientific approaches to optimising grape pressing, with Nicolas Secondè (oenology consultant, France) and Michele Gnecchi (Willmes); and the role of oxygen and temperature in the sustainability of secondary fermentation, with Ileana Vigentini (University of Milan) and Diego De Filippi (Parsec, Italy).
The day will conclude with a session on gushing in sparkling wines, featuring Belinda Kemp (VitiVino, United Kingdom), followed by an exploration of how ethanol and maturation influence wine chemistry and sensory experience, with James Harbertson (Washington State University, USA).
Thursday, 22 October – Stability, longevity and emerging challenges in winemaking
The final day will open with a session on wine longevity and colloidal instability, featuring Antonio Palacios (University of La Rioja, Spain) and Serena Belfante (Essedielle, Italy).
The programme will then address emerging wine instabilities and the challenges associated with calcium and colloids, with Davide Camoni (oenology consultant, Italy); the prevention of phenolic instability in red wines caused by quercetin precipitation, with Angelita Gambuti and Alessandra Luciano (University of Naples Federico II, Italy) and Virginie Moine (Biolaffort, France); and strategies for controlling Brettanomyces through the use of fungal chitosan, with Nathalie Sieczkowski (Lallemand Oenology, France) and Véronique Maquet (KitoZyme, France).
The programme will conclude with a session on wine protein stability and emerging solutions, featuring Matteo Marangon (University of Padua, Italy) and Gianni Triulzi (Enartis, Italy).
