


Process is fully automated and remotely supervised, according to industry 4.0 technologies. Maturation tank is equipped with sensors and valves, which measure and regulate parameters such as oxygen, pH, sulfur dioxide mass and global temperature.
Thermal conditioning made externally through cooling jackets is actively combined with process control.
Maturation tank allows each winery to produce mannoproteins that improve quality of the wine, starting from materials that otherwise would be eliminated along with other wastes.
